Which clutch is best for built Evo bagger

I am have trouble deciding which clutch setup to go with for my hot bagger project. I am going to use a 107 S&S motor and will need a good clutch to hold up to the pounding. The Baker King Kong clutch is about 1,300. I have the Revera clutch is very easy to adjust and has light pull, costs about 700. And now this guy at the shop I go to says to get a Hydraulic clutch?? What do you guys use and why?
Going into a 1997 Electra glide classic.
