fuel injection or carb

I have 2001 roadglide with fuel injection,after many attempts to have it tuned properly I am ready to try changing it to a carb. I have installed Screaming Eagle 211 cams,thunder header,screamin eagle air cleaner and a power commander.But different tuners cant seem to get a sneeze out of it that seems to occur between 2100 and 2600 rpm,only when the bike is just cruising,under full throttle it works fine.Other than buying carb,manifold,ignition module and any other hard parts needed,what is involved in changing it over to a carb.
